Tante Marlene's Zucchini Casserole
- 4 medium OR 6 small zucchini
- 3/4 cup carrots, grated
- 1/2 cup diced onion
- 1/2 cup sour cream
- 2 1/4 cup stuffing mix (herbal cubes)
- 1 can cream of mushroom soup (may also use cream of chicken
soup)
- 6 tbsp. butter or margarine
Saute carrots and onions in 4 tbsp.margarine. Melt remaining
2 tbsp of margarine in microwave & add 3/4 cup of bread cubes.
Slice zucchini into 1/2" chunks, (do not peel). Par boil
zucchini slices 5-7 minutes, and then drain off water. Mix all
ingredients together and put buttered bread cubes on top. Bake
30 minutes at 325-350 degrees.
