Nana's Special Peanut Butter Easter Eggs

  • 1 medium potato, peeled
  • 1 Tbsp. butter
  • 1 lb. powdered sugar
  • 18 oz. jar peanut butter (creamy type)
  • 12 oz. pkg. semi-sweet chocolate chips

 

Boil potato until mushy. Drain potato and mash with butter until smooth. Add sugar and mix well. Shape mixture into eggs and arrange on waxed paper lined baking sheet. Let stand overnight or until firm. Melt chocolate chips in double boiler. Coat peanut butter eggs with chocolate and set in cool place until chocolate hardens.

Recipe makes approx. 3 dozen eggs.
