YUMMY LEMON FLUFF

  • 1 (14 1/2 oz.) can evaporated milk; which is 1 3/4 cups milk
  • 1 (4 oz.) pkg. lemon gelatin
  • 1 3/4 cups hot water
  • 1/4 cup lemon juice
  • 1 cup sugar
  • 2 1/2 cups vanilla wafer crumbs

Chill unopened can of milk in refrigerator until icy cold (3-4 hours). Dissolve gelatin in hot water. Chill until partially set; whip until light and fluffy. Add lemon juice and sugar. Whip chilled milk and fold into gelatin mixture. Line bottom of 9 x 13 inch pan with crumbs. Pour gelatin mixture over crumbs. Chill until firm. Cut into squares. If desired, garnish each square with a maraschino cherry or pecan half. Serves 12

A great variation: use chocolate wafers and lime gelatin.

THIS IS AN OLD FAMILY FAVORITE AND MAKES A GREAT ADDITION TO ANY SUMMER FAMILY GATHERING!!!
