YUMMY LEMON FLUFF
- 1 (14 1/2 oz.) can evaporated milk; which is 1 3/4 cups milk
- 1 (4 oz.) pkg. lemon gelatin
- 1 3/4 cups hot water
- 1/4 cup lemon juice
- 1 cup sugar
- 2 1/2 cups vanilla wafer crumbs
Chill unopened can of milk in refrigerator until icy cold
(3-4 hours). Dissolve gelatin in hot water. Chill until partially
set; whip until light and fluffy. Add lemon juice and sugar.
Whip chilled milk and fold into gelatin mixture. Line bottom
of 9 x 13 inch pan with crumbs. Pour gelatin mixture over crumbs.
Chill until firm. Cut into squares. If desired, garnish each
square with a maraschino cherry or pecan half. Serves 12
A great variation: use chocolate wafers and lime gelatin.
