Harvest Loaf
Cake
1 3/4 cup sifted flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1/4 tsp. ground cloves
1/2 tsp. salt
1/2 cup butter or margarine
1 cup sugar
2 eggs
3/4 cup canned pumpkin
3/4 cup chocolate chips
3/4 cup chopped walnuts
Combine flour with baking soda, salt and
spices. Cream butter. Gradually add sugar, blending well. Blend
in eggs, beat well. Add dry ingredients alternately with pumpkin,
beginning and ending with dry ingredients. Stir in chocolate
chips and walnuts. Recipe makes one bread pan size loaf.
Bake at 350 degrees for 65-75 minutes.
Cool, and wait 6-7 hours before slicing.
Optional glaze frosting: 1/2 cup sifted
powdered sugar, 1/8 tsp. nutmeg, 1/8 tsp. cinnamon, blend in
1-2 tsp. cream or milk.
This is my mother's special holiday loaf.
Even when my Mom was in her eighties, she continued to bake this
wonderful recipe, for children, grandchildren and great-grandchildren
to enjoy!
