TERRIFIC AUNT MARY'S BAKED STUFFED CLAMS

  • 1 can minced clams (8 oz.)
  • 1/2 tsp. powdered garlic or 2 cloves of garlic chopped
  • 1/4 cup seasoned bread crumbs
  • 1 tsp. parsley
  • 2 Tbsp. olive oil
  • 1 Tbsp. fresh diced onions
  • parmesan cheese
  • dash of oregano
  • salt to taste

Saute garlic, onion, parsley and oregano in olive oil until onion is soft. Add bread crumbs into pan and mix thoroughly. In a separate bowl put the canned clams plus juice and salt (to taste). Add bread crumb mixture and stir. Can be refrigerated until served. Spoon into clam shells, sprinkle lightly with bread crumbs and parmesan cheese (just before baking). Place shells on baking sheet in 375 degree oven for 25-30 minutes, or until crusty on top.
